I'm no Martha Stewart but...

I just love cooking for my baby.  I'm not talking about my big baby (hubby), I'm talking about my little baby (my son).  I wish I loved cooking for hubby and myself.  Anyway, Baby K started solid foods about 2 months ago and it's been an awesome experience for both of us.  I love cooking for him and watching him try the different foods.  I love introducing a new food and looking at his initial reaction to the taste (which is usually hilarious).  That boy is so expressive.

I am more than fulfilling my wishes for him as it pertains to food.  Firstly, I wanted to nurse him but thought I wouldn't be able to because I'm a coward when it comes to pain.  Although the first few weeks of breastfeeding was uncomfortable it got better and now it's so natural to me.  I'm so glad that my little guy is 7 months old and I'm still nursing and giving him expressed milk.  Because I'm working my supply is dwindling but I'm still hanging in there.  My future plan is to do half formula, half breast milk in the future.  Secondly, I've always thought it would be cool to make my own baby food because of cost and because I know exactly what he's getting.  I also like the idea of cooking for my baby.  I didn't think I would be able to do this because of work and other obligations.  Fortunately, I've been able to.  So far my baby has eaten rice cereal, oatmeal cereal, sweet potatoes, avocado (least favorite), green peas, carrot, yellow squash, bananas, prunes, pears, mangoes, peaches, and apples.  Everything except the cereals and the prunes have been prepared at home.  The non-DIY baby foods are store-bought and we mainly use Earth's Best or Plum organic baby food.

So cooking all this stuff is actually not that difficult.  I have to give credit to my little helper (well big helper), the Beaba Babycook.  I love this thing and all those foods (except the bananas of course) were cooked in this little gadget.  It does all the essentials--cooks and purees the food.  It can also defrost frozen foods.  It's pretty neat because I just chop up the fruits or vegetables, put it in there to cook while I'm doing something else, then puree it, then serve or store.

















I usually make a week or 2 (the most) at a time and then stick it in the freezer.  I've tried several storage containers including:











I think I like the bottom set the best (from Dr. Brown's) but I use all of them.  We mainly use these spoons (which he also loves to chew on):

The entire spoon is made out of soft silicone so it's very easy on the gums.  It helps that the handle is silicone because sometimes he'll put it in his mouth from the wrong end.  Recently whenever I feed him, I give him his own spoon since he frequently reaches out and grabs the spoon that I'm using.  He wants to help so I give him his own spoon to experiment.  This actually works out great and makes feeding easier because he's not fighting to get my spoon.

I've discovered that the broth the fruits make after they are cooked usually taste really good (especially the apples).  They taste very similar to juice but of course without all the added "stuff."  I've put a small amount the apple juice (from the fruits that were cooked in the Babycook) in a sippy cup and given it to my baby so that he can get practice using a cup.   I don't like the idea of just giving him plain water or diluting fruit juice.  He actually hasn't had much juice yet because we are just practicing using the cup.  We prefer the Avent sippy cups.  The cover also can be used on the Avent baby bottles that we use.

And of course, meals are more exciting for both of us when it's served in a high chair.  We love our high chair.  I think it's very nice (it was handed down to us by a friend).  Needless to say that I have to clean the high chair and the area around it after almost every meal :).
Of course this is just what we use.  Half the stuff we probably don't need but they make meal time more exciting for us, or maybe just me.  Next week we will try butternut squash and maybe papaya.

Today I'm thankful for my husband

Hubby has made dinner two nights in a row and I'm very grateful.  Both meals were so yummy.  Obviously he doesn't cook all the time or else I wouldn't be dedicating a special post about it but neither do I. LOL.  If he blogged he could also post about all the times I cook (not frequent enough but we are working on it).  The past two weeks we've been eating more at home.  We go throught spurts of this, just like exercising (lately).

Good food good peeps

For the past few days we've been eating it up with some wonderful people.  Because we are moving to a different state in exactly 19 days we've been spending quality time with the people we love.  Of course spending quality time includes eating.  It wouldn't be quality without some good food to accompany the good people.
On Saturday evening we had dinner with one of my husband's friend/basketball colleague and his family.  They are from Nicaragua and they cooked us some good food.  They grilled this steak thingy and made Spanish rice.  It was so freaking yummy.  For dessert, was the most awesome tasting tres leche cake.  Needless to say, hubby and I overdid it but it was so worth it.  It was also fun to sit around and laugh.  We have a big language barrier as we hardly speak Spanish and they barely speak English but it was all good.  My husband knows a lot more Spanish than I do so he acted as translator for me the majority of the time.

Sunday after church we went to dinner with an "us" couple.  "Us" couples are what we call other couples in interracial relationships that are similar to ours (bfwm).  They attend our church and are A LOT younger than us (a whole decade younger).  Regardless they were very mature and very sweet.  This was our first time ever hanging out with an "us" couple and it was so refreshing.  At dinner we talked about some of the similar challenges we face.  We also talked about a lot of the good things about being interracial.  We chatted about everything.  This couple is actually new to us and this was our first time doing something with them.  I wish we had known them longer.

Last night our lovely neighbors had us over for dinner and stuffed us.  Saying that her husband is an awesome cook is an understatement.  Let's just say that so far he's the only one that makes me go back for seconds of beans.  I hate most beans but last night at the rate I was going you wouldn't believe that.  We had rice with pinto beans, sausage, and steak.  Everything was delicious.  I wasn't even embarrassed to ask to take leftovers home. LOL.  And today, while at work, all I could think of was my leftovers.  I asked him how to make the beans and it was like a 4-5 hour adventure that he described.  I was thinking, no one wonder they are best I've ever tasted.  

Anyway it was great to dine with friends.  We don't have any family here but we've met some great folks that are like family.  We feel very blessed to have them in our lives.

Attack of the sweet tooth, again...

Ok, I know you're probably saying "so what's new?"  You all probably remember that I have a sweet tooth that is usually worse certain times most days of the month.  Well, it's taken me over again.  It's like crack (not that I know what crack is like first hand, but based on what people say).  

Nothing can satisfy my sweet tooth other than eating something sweet.  I'll think and feel "I need something sweet" and the thought never goes away until I get something sweet (even if it's something small).  Remember my bread and condensed milk adventure Well today it's wheat bread and nutella.

At first I wasn't feeling so bad about eating wheat bread and nutella because I read on the nutella container that with milk it's a "great healthy way to start the day."  I started feeling better about the whole thing....then I read that the first ingredient in it was sugar.  Yah, not so nutritious after all.  I should have known.  It tastes way too good to be good for me. Ha!  

So there you go!  For me, it's another day of Woman Conquered by her Sugar Craving.  And I'm sure there will be many more days like this to come.  It's one of my weaknesses that I will continue to try to work on although I know I will fail miserably, well actually happily because I get what I want--sweets!

Quick Weekend Rundown

We had a very pleasant weekend.  For me the weekend started Friday evening and it started off great.   I was glad to hear that one of my blog friends is preggers. Congrats to TOI formerly known as MsBabyPlan.  Hooray!

On Friday night hubby and I had Italian at one of our favorite restaurants then saw the movie Sucker Punch.  Overall it was a great night with tons of silliness (like we usually do).  The movie was pretty good--had an interesting concept.  I did a lot of "girl power" cheering while hubby stared at me.

We had breakfast with a couple friend on Saturday morning.  We invited them over to our house.  Hubby made Belgian waffles (Liege type--see below) from scratch.  Yes, he used flour, yeast and a ton of other stuff that I don't normally cook with.  I usually cook waffles or pancakes out of the box (Just Add Water). Ha!  He also made eggs and sausage.  I'm not a fan of breakfast meat but the eggs were so delicious and the waffles were to die for.  I think he makes the best eggs out of anyone I know.

After breakfast we went to a park with our couple friend and took our dogs.  It was great just enjoying nature on a beautiful sunny day.  After lunch we went to a birthday party for a 1 year old.  She is the daughter of one's of my husband's coworkers.  She was so adorable.  In my usual style, I had a "open mouth insert foot moment" after I asked my husband's coworker if the interesting man that I was talking was her grandfather.  She nicely said that it was her father and that "he didn't age too well."  Errr...needless to say I felt horrible and my husband could not stop laughing at my blunder.

Saturday evening we had dinner with another couple (friend and fellow blogger), D.  We brought over pizza from Sal and Mookies and watched the VCU vs. Butler basketball game.  They have an adorable almost 2 year old son (if you check out her blog there's the cutest video of him saying "praise the Lord.")  I must admit that I wasn't interested in the game at all but enjoyed the time chatting it up and playing with their son.

Today I went to church (the early service) and did a bunch of stuff after.  I went shopping for household items then came home and did some Spring cleaning.  I did a little packing in preparation for our BIG move in less than 3 months.  I got rid of a bunch of clothes that I plan to donate.  I have to go through shoes next weekend.  I rearranged the attic and got rid of a bunch of stuff that I don't want to take with us to NC. 

I should be embarrassed to say this but I had tons of wedding stuff from 3 years ago (left over favors, programs, disposable cameras, bubbles, gifts, etc) that were just thrown in the attic.  I finally went through the stuff today.  I was hoping to find money but I had no such luck.  There were tons of wedding gifts that has never been used and some have duplicates.  Now the attic is organized which should make it easier on us when it's time to move.

I also co-sewed a patch on my neighbor's nursing uniform.  This was an interesting little adventure--the patch is on fine but the bobbing thread was doing something funky so the underside looks a little very erratic.  That's alright, we got the job done.  Finally, I spoke with an old friend today and it was so refreshing.

Diet and Exercise

When I say diet I don't mean any of the restrictive things you may or may not be thinking of.  I'm talking about in general what foods I eat.

As far as diet goes,  I am trying to eat more vegetables and fruits.  It's so hard but I know I can do it.  I'm realizing that I have to plan for them in all meals (and not just at dinner time).  I am still eating 5 small portions of meals/day several times per week.  I like this better because I'm not starving in between meals.  I need to cut down on my sweets also.  Tonight I had a waffle with syrup, nutella and whipped cream AGAIN (that's 2 nights in a row).  I have been taking Omega 3 fatty acid tablets as recommended by Monique from Tipa Tipa a while back and it's tamed my sweet tooth a little but not enough.  I need a miracle. LOL

As I mentioned in my last post, I am continuing my P90X workouts.  I'm on week 7.  The pace of P90x is a lot slower and some days (well, a lot of days) I miss Insanity.  But I realize that Insanity is not a good maintenance workout (at least not for me and my already bad knees).  Also, in preparation for future pregnancy I don't need to be doing all that vigorous workout.  P90x is a little more toned down so I think it should be ok.  I'm also trying to fit in jogging a few times per week too.  I think that should be enough.

North Carolina vacation recap

A brief update on life since I've been missing for over a week.  Lots of pix included.
Vacation went well in NC.  On the way we got to hang out with some good friends.  We did look at some homes but it's too early to seal the deal on anything.  We are planning on renting for several reasons: 1) we bought the house that we are living in now but can't sell it because we will lose tons of money so we will rent it.  We don't want to have to be juggling two mortgages 2) We will be in NC for at least 2 years.  We are not sure if we will settle there once we are done with our training.  We don't want to purchase a home then move again in a few years.  3) If we do decide to stay in NC, we'd like to stake out neighborhoods before we jump into a purchase.

The most fun yet relaxing were the last few days that hubby and I spent with my cousin and her fiance'.  They are really cool down to earth people and we had such a good time.  At the cabin we had no cell phone signal so we were cut off from civilization for a few days.  I didn't mind though.  The cabin was in the mountains and it was so peaceful.  I would have preferred to be there in the fall for the foliage but it was beautiful regardless.

One of the trails we went on, the trail map described a beautiful waterfall (see above).  It was beautiful but a lot smaller than expected.

Today I'm liking...

the oatmeal from McDonald's.  Actually since I found out that they carried oatmeal, I've been trying to get my hands on some every chance I get.  I found out about the McDonald's oatmeal over the Christmas weekend while flying back from visiting family in Orlando.  I was in the airport and caught a glimpse of their menu.  I probably would have never known about it since I almost never go to McDonald's AND I almost never watch TV.  But I am so glad that I found out because I've been killing it ever since.

Ok, so I know that a few people are anti-McDonald's but that oatmeal is yummy.  It's only got about 290 calories.  I love the juicy raisins, cranberries and apples that are in it.  I think it's worth the $1.99 (especially on days when I'm rushing to work).  On the days that I'm not rushing I steal McDonald's idea and make my own oatmeal with all those ingredients.  It tastes pretty good too but I think food always taste better when someone else does the work to prepare it.  I just can't believe I never thought about adding those ingredients to my oatmeal before.  I'm definitely lovin' it.

Anyway, I know that this and the last 2 posts were about fast food places but I had to introduce you guys to the McDonald's oatmeal if you haven't tried it already.

Yet Another Confession

So today was a slightly more frustrating day at work than usual.   I mean I have the usual frustrating moments there but today was more so.  After I left work I was craving something unhealthy to eat to cheer me up.  Ok... don't judge.  I couldn't stop thinking about the Wendy's Natural cut fries.  Conveniently Wendy's is located close by where I work so I figure it would be a quick stop through the drive-thru.  

As I was eagerly making my way through the drive-thru (almost drooling, well I think I was drooling), an SUV jam-packed with teenagers cut me off.  They just skipped right in front of me!  I was so mad but I let it go and managed to calm down (and wipe my drool).  

I put my window down and heard them ordering 10 cheeseburgers and 10 small fries.  I could not believe it.  I got mad again and sped out of the drive thru lane and went home.  As I was driving home I was thinking that although I really wanted those fries I was glad those bratty teenagers (who probably had the munchies) cut me off.  I was thinking--wow, I was just spared I don't even know how many unhealthy calories.

So I went home and did the Insanity workout video that I skipped this morning.  My husband asked me what we were doing for dinner.  So you know what I suggested right...Wendy's of course.  Not only did I get those yummy fries, I also got a Spicy Chicken Sandwich.  Instead of the small fries I had plan to order earlier,  I got the medium ones instead.  And they were so good!

Everything turned out okay after all. You see, everything does happen for a reason (although those fries probably had way more calories than I needed).  I don't do that too often but sometimes I choose to live a little :)

Post Thanksgiving Update

I know I've been MIA for some time now.  I'm still trying to recover from the turkey coma.  Here's a recap.

1) Thanksgiving with the in-laws turned out great as I anticipated.  The food was yummy.  I didn't overeat (too much).  It was different from Thanksgiving with my family but that was alright.  The dogs did good on the 6 hours drive there and back.  On Thanksgiving day they kept breaking out of the crate to join the festivities.  It was so much fun hanging out with my husband's family.  They are hilarious.  I spent a lot of time with his adorable nieces and nephews too.  Kids are so adorable pre-teen.  One of his nephews (who is 5--almost 6) asked me if we had any children yet.  I busted out laughing and asked my husband and his mom if they told him to ask me that.  They didn't.

2) There was no Black Friday or Cyber Monday shopping for me.  I did get a few things but I didn't camp out hours before.  I strolled in the stores around noon when most people were finishing up with their shopping. I don't think I'll ever do the Black Friday thing.  I love sleeping and I'm also freaked out by the thought of being trampled by some eager shoppers.  One of my purchases that I'm happy about was the dress that I got for the Christmas party at my husband's work.  It's so cute.  I'm sure I'll share it on a future post.

3) I have not done any P90X or other workout since the day before Thanksgiving.  Although my goal is to workout most days out of the week I didn't feel too bad.  My Insanity workout video came in the mail and I plan to start it Monday.  I know it will kick my booty so I don't mind slacking for a few days.  Once I start I plan to stay committed to it.  I'm excited about it but also nervous.

4) I finally sewed a few things.  My husband's genius sister (who is pregnant with twins by the way) figured out how to use my ancient sewing machine.  She taught me a lot.  I finally was able to sew without jamming the machine.  I made a cell phone cover (which I probably won't use) and a tiny pillow. Yay!  I feel so accomplished. 

5) I almost forgot.  My honey and I went to the UF vs FSU football game on the Saturday after Thanksgiving.  We lost miserably.  It was so disappointing.  This was a huge rivalry and our first loss (to FSU) in six years.  Our entire season has been crappy so it wasn't such a hard blow.  It would have been worse if we had a good season then lost to them.


Anyway, that's it for now.  I have a Christmas party to go to for my work today.  Should be fun.  Will let you know more about it after.  I love getting dressed up and going to social events!

Recipe time (again)

Alright so another lovely reader expressed interest in my coconut milk curry chicken so this is another attempt for me to try to remember what I did.  When it comes to cooking, I'm more of an artist rather than a scientist.  I just do what comes natural to me and deal with the consequences later.  Thankfully this meal came out good.

Note: This is not necessarily a Jamaican dish.  Many Jamaicans (and other people from different cultures) cook curry chicken but I decided to add some things I found tasty from other cultures (particularly the coconut milk).  Coconut milk is added to "rice and peas" (a staple item in Jamaica) but coconut milk is not normally added to our meat dishes.

Ingredients:
-4-5 pieces of boneless skinless chicken breast (cubed).
-1 onion (chopped)
-1tbsp garlic (minced)
-1 tsp black pepper
-1tsp thyme
-salt (maybe 1 tsp) ?
-1/2 tbsp ground cinnamon
-1/2 tbsp ground ginger
-1/2 tsp cumin
-2 tbsp curry powder
-1/2 tsp chili powder
-Optional: I also used a pepper cocktail mix that my grandparents made from peppers and herbs in their garden because hubby and I like spicy foods.

-1 can coconut milk
-1 cup water

Directions: Place all the ingredients above in a large bowl (except water and coconut milk) and mix together.  Pour this mixture into a crockpot.  Add the coconut milk and water, then stir.  Cover crockpot and cook on low. I believe I let it cook for about 7-8 hours.

Backed by Popular Demand

Ok, so maybe it wasn't that popular.  A handful of people asked me to share the recipe of some of the meals I cook so this is an attempt to do so.  I love sharing but I don't measure ingredients when I cook and I add things as I go so this makes it difficult.  Regardless, I will try so bare with me.

I will first post the Callaloo chicken recipe.  Callaloo is slightly similar to collard greens (meaning they are both greens).  Besides that they are completely different (I think).  They taste different and I think they are cooked differently (I don't know how to cook collard greens).  Callaloo is usually eaten with salt fish aka cod fish aka bacalao.  My husband introduced me to adding chicken to it a few years ago and now this is the only way we eat it in our household.  Here is a link to a website so you can see how callaloo is normally cooked (there's also a video).  Here's what I do (note that the amounts are estimates):

Ingredients for callaloo:
-1 bag of chopped callaloo (from my grandma's garden). Canned callaloo is also available online
-1/2 tomato (diced)
-1/2 onion (chopped)
-1 tsp chopped garlic
-1 tsp black pepper
-1 tsp salt
-1 tsp thyme
-1/2 cup water
(I also added an unknown amount of a pepper mixture.  It's something my grandparents make from the peppers and herbs they grow in their backyard.  My husband and I both like spicy foods so we add this to give a kick to most of our meals).

Ingredients for chicken: 
Let marinate for a few minutes:
-4 boneless, skinless chicken breast (cubed)
-1/2 tomato (diced)
-1/2 onion (chopped)
-1 tbsp garlic
-1 tsp black pepper
-a little salt

1) For callaloo: Saute` onion, garlic, tomatoes, thyme in a pot.  Then add chopped callaloo, salt and pepper. Add water.  Cover pot and let cook for about 20-30 minutes (until soft)--stirring occasionally to prevent sticking to the bottom of the pot.
2) For chicken (while callaloo cooking): Add all ingredients in another pot, including chicken. When chicken is cooked, pour over callaloo and stir together.

This is commonly served over white rice but you can also eat with it fried dumplings or "food" (a combination of boiled dumplings, green bananas, yellow yam, etc.

My Best Cooking Week in a Long Time

Woohoo!  I am so excited that I cooked several days last week.  For a while there it felt like I cooked more when I was single compared to while married.  Although I know this is probably not true, it felt like it.  My husband and I were eating out almost daily for a while.  We never turned down a dinner invitation.  

One of my goals was to change this and eat at home more.  I wanted to do this for several reasons including: eating more healthy, saving money, getting practice for when we have kids, having more intimate dinners at home, etc

I have slowly been doing this (cooking more) and it was very helpful to have a house full of people this past summer because we could no longer afford to pay for eating out daily.  After the summer we went right back to our old habits.  Now we are re-training ourselves.  Since I'm so excited I will post what I cooked this week.  I must also say that on the days that my honey got home before me he started dinner (which was very helpful).  So here was last week's plan:

K-Family Weekly Dinner Plan--Week 1
SUN: crab cake, red potatoes, edamame. Was so delicious.  Quick and easy to make.
MON: coconut milk curry chicken over orzo pasta (from Miracle Noodle), french cut beans on the side.  Done in crockpot.
TUES: shrimp taco with salsa, fresh spinach, shredded cheese. Homemade guacomole on the side. Triumph: I got my husband (and myself) to eat spinach, tomatoes, avocado, green peppers, onions.
WED: Callaloo with chicken over brown rice.  Fried plantains on the side. Callaloo is normally eaten with saltfish (at least in Jamaica) but I guess we put an American twist to it.

THURS: Ate out with friends, celebrating one of the guys taking his Board Exam (a big feat for him). Had Pad Thai @ Pan Asia.
FRI: Planned on eating something that hubby was supposed to cook but ended up eating left overs.
SAT: Ate out with a friend--Japanese buffet.  The sushi was awesome but I ate too much.  I promise myself I will never do that again.

My goal is to plan the dinners for the week on Sundays (ahead of time).  I hope to be successful at cooking more at home by doing this.  I plan to write down my daily dinner menu on the board in our kitchen and cross it off as I cook each day's meal.  I've never been this excited about cooking before.  I will let you know how it goes.

Day saved by one fine man and some yummy popcorn

Yesterday started off somewhat rough but ended pretty well.  So let me start from the beginning.  I have to take this yearly exam every October for training/work.  I have known about this exam since forever because I have taken it every October (for the past 3 years).  Although it's in my field each year, the questions are different. 

Each year I take it I vow that I will study extremely hard for it the next year.  I usually walk out of the test saying "wow, that wasn't so bad.  If had studied I would have done great."  Let me just say that this is not a test that you just study the night before for.  It would take months of preparation.  Needless to say, being the procrastinator that I am I don't prepare in advance.  It's difficult for me to prepare for something that seems soooo far away!

Anyway, I woke up early the morning of the test and tried to cram some facts in my brain.  I "overstudied" (meaning I wasn't paying attention to the time and was almost late for the test).  That would not have been good.  I took the first part, had a break, then took the second part.  Wait, I failed to mention is that I got a visit from mother nature during the first part of the test (which really sucked) and I was cramping so much during the second part.

When the test was over I could hardly wait to get home to see my honey.  All I could think about was getting home and giving him a big hug.  It's so good to have a way to de-stress after a  challenging day.  On my way home by husband text me to not stop to look around the house when I got home.  He told me to go straight upstairs.  I figure he had something up his sleeve but I didn't know what it was.

He arrived home and I was so happy to see him.  When I got downstairs he showed me a huge can of popcorn.  I got even happier.  This was not just any popcorn.  This was gourmet popcorn from Garrett's in Chicago.  It is so good.  We visited Chicago for the first time for a friend's wedding this past May and we overindulged in the popcorn.  I don't even like popcorn that much but this is not your regular popcorn.  We loved it so much we even brought some back  (2 large bags) on the airplane with us.

I have been meaning to have my friend send us some and I drool every time I visit Garrett's website.  I never got around to asking her (of course not, I'm a procrastinator and I'm forgetful).  And I never ordered from their website because it's expensive including shipping.  I remember my honey asking me a few weeks ago what I thought about him wasting $61 on something.  I told him that it was fine especially since both of us work our butt's off.  At the time I didn't know what he was buying.

I am so glad he got that popcorn.  After a challenging day I had my favorite man and my favorite popcorn.   What a great ending!
